Since I get pregnant, I do cook sometimes sweet potato, because I believe it helps for constipation and it is sweet and taste good. My husband doesn't really like it but I loved it very much. Sometimes, I cooked some and put in the fridge and heat it if I wanted to eat it and then put butter on top or eat it plain. Before when I was not pregnant, I do not much of eat sweet potato but now I am kind of like eating it. It is just funny since I am not really fond of eating it and now I liked it, as the body changes during pregnancy, the food that I liked or my favorite, I do not like to eat nowadays and the food that I don't eat much, and I crave for it and that is really is when you're pregnant. Anyhow, boiled sweet potato is good or fry it hmmm delicious and crispy, I was even thinking to cook sweet potato this afternoon and when I am hungry later, I will eat it.
Anyway, the health benefits of sweet potato is that rich in Vitamin A (betacarotene) and Vitamin C and they are powerful antioxidants that work in the body to remove free radicals, this free radicals are chemicals that damage cells and also it is good for stomach ulcers and inflammation conditions of the colon, good for low blood pressure, constipation, good for diabetics as it helps stabilize blood sugar levels and much more!
